A Mess of Roasted Tomatoes

There's a story behind these tomatoes.  Well, two stories, but I'll only elaborate on one. 

A couple of years ago I started a forum called Food on Radio Paradise.  I'd been a part of the community for less than 6 months, but thought there might be some other foodies there.  And there were.  Quite a few RP members posted recipes and ideas.  I was pleased.  And then life caught up with me, and I didn't post anymore recipes.  I was barely surviving, and I certainly wasn't cooking anything worth sharing with the internets.

continued to post recipes, but the one person who really kept the forum going was Zissy.  She even created a blog, which she called Recipes Shared at Radio Paradise

Last night, when I was at a loss for what to do with the 32 tomatoes I had sitting in my kitchen, I posted a comment at Radio Paradise.  One of two resident tomato experts came to my aid (as did other folk, but JrzyTmata's recipe struck a chord), and gave me the link to her own recipe on the blog that Zissy started, based on my Food forum.  (Are you following me?) 

This is what I made today with my 31 tomatoes (I ate one last night on my salad):  Roasted Tomato Sauce.  And it is delicious.  So thank you, Jrzy, and thank you Zissy, for keeping "my" forum alive and taking it further.

And the garlic! Yummmmmmm.....

That sounds wonderful. And I have a lot of tomatoes sitting on my kitchen counter. It has just become my project for tomorrow.

Cassie, it takes a while. I had no idea how many pounds of tomatoes I had, but I knew I had a lot, so I doubled the other ingredients and did two batches. My oven was on for a good three hours!

That said, it is worth it. One other thing: it's garlicky, so feel free to reduce the garlic. I used two heads because the cloves were big, and I like roasted garlic. Next time I might use less, though.

I had no idea there was a blog! I need to update our word documents.

I never in a million years would have thought about taking the RP recipes and ideas of them for myself. I directed all of the profile information to RP and my name wasn't anywhere except where I added a recipe. I thought I was known better than that but apparently not. It was getting hard to read through all of the forum chit chat so I thought it would be easier to go to a blog and get a recipe. Your name is now in the profile as the originator and again I never took it as my own.
